SHRUMS IO is a climate-controlled indoor farm producing a deliberate premium mix of culinary mushrooms — harvested to order, cold-chained from the growing room, and grown on a staggered schedule so the same varieties show up week after week.
The Mix
Oyster carries the volume. Lion's mane and king oyster carry the plate. One specialty rotates through for color and for something new on the line sheet.
Primary · volume
Velvety fan-shaped caps in tight clusters. Fast, forgiving, and the workhorse of the room — it sears hard and fast and it moves at market. A 7–10 day fresh window.
Anchor · the headliner
Shaggy white clusters with a dense, fibrous bite. Chefs pull it apart and treat it like crab or scallop — it browns beautifully and holds its structure in a hot pan.
Anchor · grocery-friendly
Thick ivory stems that cut into rounds and take a hard sear like a scallop. The longest-keeping mushroom in our rotation at two weeks and beyond — the one produce managers say yes to.
Seasonal · the theater
Pink and golden oyster, chestnut, pioppino — one specialty in rotation at a time. Color on the market table, and a reason for a chef to open the email.
Coming with the leased bay
The specialty-category leader in grocery and the other two-week keeper. It ties up rack space for months, so it arrives when the room is built to carry it.

Specialty mushrooms fail wholesale for the same two reasons every time: they show up inconsistently, and they don't keep. Both are design problems, and we designed for them first.

Held at 34–38°F from harvest, packed in breathable containers, and cut against a delivery cadence rather than speculatively. Fresher on arrival means longer on your shelf.
For produce departments we lead with king oyster and — in Phase 2 — shiitake, the two longest-keeping gourmet species, because short shelf life is the buyer's first objection.
Every batch is logged: species, substrate lot, inoculation date, harvest date, and destination. If you ever need to trace a case back, the record exists.

SHRUMS IO INCORPORATED is a Washington corporation based in Longview, in Cowlitz County. We're owner-operated and starting where every honest small farm starts: a pilot room, a short list of varieties, and a discipline about records before there's anything to record.
The plan is unglamorous on purpose — prove a consistent weekly harvest at small scale, earn the market stall and the first restaurant accounts, then scale into a leased light-industrial bay with in-house substrate production. We'd rather be the grower a chef can count on in year three than the one who over-promised in year one.
